Cinco De Mayo Stuffed Peppers

This recipe is easy to make, it only took me about 20 minutes! Family friendly & party friendly for Cinco De Mayo! Plus, it's healthy!

Ingredients:

10 sweet peppers, halved & seeds removed

1 package reduced fat cream cheese

1 handful chopped green onions

1 roma tomato, chopped

1 jalapeño, chopped

1 chipotle chili pepper in adobo, chopped


Directions:

1. Preheat oven to 350.

2. Slice sweet peppers in half and remove seeds.

3. Chop green onion, jalapeño, chipotle chili pepper and tomato.

4. Combine cream cheese, green onion, jalapeño, chipotle chili pepper and tomato in bowl.

5. Spoon mixture into sweet pepper halves and place on baking pan.

6. Bake for 10 minutes.
