Fitish Breakfast Bowl
This colorful recipe is packed with phytochemicals, the nutrients in plants that keep us feeling and looking healthy! These chemicals are responsible for anti-inflammatory and antioxidant properties (hello good skin!). They come from the different pigments (color) in plants. This is why I love to include many different colored vegetables in one dish because I feel like I’m getting tons of important nutrients all at once!
Sweet potato- vitamin C helps produce collagen for wrinkle-free skin, vitamin E prevents signs of aging.
Zucchini- good source of antioxidants to slow aging.
Tomato- protects against sun damage.
Bell pepper- prevents wrinkles, excellent source of vitamin C.
Onion- prevents inflammation, good source of vitamin A to prevent acne, good source of vitamin C, good source of vitamin E, protects skin from bacteria.
Avocado- good source of vitamin C & E, good source of healthy fats for glowing skin.
½ c Sweet potato, diced
½ c Zucchini, diced
½ c Tomato, diced
½ c Bell pepper, diced
½ c Onion, diced
½ Avocado, for topping
2 T Olive oil
½ t Red pepper flakes
Salt, to taste
1. Preheat oven to 400.
2. Place sweet potatoes on baking dish and toss with 1 tablespoon of olive oil, bake for 20 minutes.
3. Heat remaining olive oil in a pan over medium high heat and sauté the diced veggies until tender.
4. Prepare eggs to your preference (this recipe goes great with poached eggs).
5. Add all of the ingredients to a bowl. Season with red pepper flakes and salt. Top with avocado and enjoy!
