Slow Cooker Chicken Tortilla Soup
This recipe takes less than 30 minutes to prepare! Packed with flavor & nutrients! Place all ingredients in a slow cooker for 6-7 hours on low or 3-4 hours on high. Remove chicken to shred when done and then add it back in!
1 lb boneless skinless chicken breast
6 cups low sodium chicken broth
1/2 yellow onion, diced
1 can diced tomatoes (14.5 oz)
1 can black beans, drained & rinsed
1 can corn, drained
1 can green chiles (4.5 oz)
1 tablespoon Frontier Chili Powder Seasoning Blend (My favorite! Lots of flavor)
1 teaspoon garlic powder
1 teaspoon cumin
Salt, to taste
Black pepper, to taste
I love this with Greek yogurt (more protein, less calories than sour cream). Tortilla strips, fresh lime juice, avocado + cilantro!
